Watermelon Popsicles

Here’s a simple recipe for fresh watermelon popsicles:

Ingredients:

  • 4 cups of fresh watermelon, cubed
  • 2 tablespoons of lime juice
  • 1-2 tablespoons of honey or sugar (optional, based on sweetness preference)
  • 1/4 cup of water

Instructions:

  1. Blend the Watermelon: Place the watermelon cubes in a blender. Add the lime juice and honey or sugar if you’re using it. Blend until smooth.
  2. Strain (Optional): If you prefer a smoother texture without any pulp, strain the mixture through a fine-mesh sieve into a bowl. This step is optional.
  3. Add Water: Stir in the water to the blended mixture. This helps to slightly dilute the mixture, making it easier to pour into molds.
  4. Pour into Molds: Carefully pour the watermelon mixture into popsicle molds. Leave a small gap at the top of each mold to allow for expansion as the popsicles freeze.
  5. Insert Sticks: If your molds require you to insert sticks separately, do so now.
  6. Freeze: Place the molds in the freezer for at least 4-6 hours, or until the popsicles are completely frozen.
  7. Remove and Serve: To remove the popsicles from the molds, run the outside of the molds under warm water for a few seconds. Gently pull on the sticks to release the popsicles. Serve immediately and enjoy!

Tips:

  • For a twist, you can add a few mint leaves to the blender for a refreshing flavor.
  • You can also add other fruits like strawberries or kiwi to the mix for a different flavor profile.
