Hot Chocolate Muffins

Ingredients:

  • For the Muffins:
    • 1 ½ cups all-purpose flour
    • ½ cup unsweetened cocoa powder
    • 1 teaspoon baking powder
    • ½ teaspoon baking soda
    • ¼ teaspoon salt
    • 1 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
    • ½ cup whole milk
    • ½ cup vegetable oil
    • ½ cup hot cocoa (or hot chocolate) mix (about 2 packets or ½ cup powder)
    • ½ cup mini chocolate chips (optional for extra chocolatey goodness)
  • For the Topping (optional):
    • Mini marshmallows (optional, for garnish)
    • Additional chocolate chips (optional)

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  2. Make the Muffin Batter:
    • In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, salt, and sugar.
    • In a separate bowl, beat the eggs and vanilla extract. Add the milk, oil, and hot cocoa mix, mixing until smooth.
    • Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix. If you’re using chocolate chips, fold them into the batter.
  3. Fill the Muffin Tin:
    • Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  4. Optional Topping: If you want to add a little extra fun, sprinkle a few mini marshmallows and chocolate chips on top of each muffin before baking.
  5. Bake the Muffins:
    • Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
    • Let the muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  6. Serve and Enjoy:
    • If desired, top with more marshmallows or drizzle with melted chocolate for an extra treat.
