Friday Frenzy’s Featured Pepsi Recipe

Pepsi-Marinated Beef Roast:


3-4 pounds beef roast (such as chuck roast or sirloin roast)
1 bottle (.5Ltr) Pepsi
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1/4 cup Dijon mustard
3 cloves garlic, minced
1 teaspoon onion powder
1 teaspoon black pepper
1 tablespoon vegetable oil (for searing)

In a bowl, whisk together Pepsi, soy sauce, Worcestershire sauce, Dijon mustard, minced garlic, onion powder, and black pepper. This will be your marinade.

Place the beef roast in a large resealable plastic bag or a marinating dish.

Pour the marinade over the beef roast, ensuring that the roast is well coated. Seal the bag or cover the dish and refrigerate for at least 4 hours, preferably overnight. This allows the flavors to penetrate the meat.

Preheat your oven to 325°F (163°C).

Remove the beef roast from the refrigerator and let it come to room temperature for about 30 minutes.

Heat vegetable oil in a large oven-safe skillet or roasting pan over medium-high heat.

Sear the beef roast on all sides until browned, about 3-4 minutes per side.

Pour the marinade over the roast and transfer the skillet or roasting pan to the preheated oven.

Roast the beef for about 2 to 2.5 hours or until the internal temperature reaches your desired doneness. Use a meat thermometer to check the temperature.

Once done, remove the roast from the oven and let it rest for 10-15 minutes before slicing.

Optionally, you can use the pan juices to make a flavorful gravy.
