Ingredients:
- 1 can (15 oz) chickpeas, drained and rinsed
- ¼ cup fresh lemon juice (about 1 lemon)
- ¼ cup tahini
- 1 small garlic clove, minced
- 2 tbsp olive oil, plus more for serving
- ½ tsp ground cumin
- ½ tsp salt (adjust to taste)
- 2-3 tbsp cold water (as needed for consistency)
- Paprika and chopped parsley (optional, for garnish)
Instructions:
- Blend tahini and lemon juice – In a food processor, blend tahini and lemon juice for about 1 minute until smooth and creamy.
- Add garlic, olive oil, cumin, and salt – Blend again for 30 seconds.
- Add chickpeas – Add half of the chickpeas and blend for 1 minute. Scrape down the sides, add the remaining chickpeas, and blend again.
- Adjust texture – While blending, slowly add 2-3 tbsp cold water until you reach your desired consistency.
- Serve – Transfer to a bowl, drizzle with olive oil, and sprinkle with paprika and parsley.
Optional Variations:
- Roasted Garlic Hummus – Roast a whole garlic bulb and blend in for extra flavor.
- Spicy Hummus – Add ½ tsp cayenne or a chopped jalapeño.
- Herb Hummus – Blend in fresh basil, cilantro, or dill.
