Chicken Salad with Grapes
- 2 cups cooked chicken breast, shredded or diced
- 1 cup red or green grapes, halved
- 1/2 cup celery, finely chopped
- 1/4 cup red onion, finely chopped (optional)
- 1/2 cup mayonnaise (or Greek yogurt for a lighter version)
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1/4 cup fresh parsley, finely chopped
- Salt and pepper to taste
- Lettuce leaves, for serving (optional)
- Sliced almonds or chopped walnuts, for garnish (optional)
Instructions:
- Prepare the Ingredients:
- Shred or dice the cooked chicken breast.
- Halve the grapes.
- Finely chop the celery, red onion (if using), and parsley.
- Mix the Dressing:
- In a large bowl, combine the mayonnaise (or Greek yogurt), Dijon mustard, and lemon juice.
- Stir until the ingredients are well blended.
- Combine the Salad:
- Add the shredded or diced chicken, halved grapes, chopped celery, red onion (if using), and parsley to the bowl with the dressing.
- Gently mix until all the ingredients are evenly coated with the dressing.
- Season to Taste:
- Add salt and pepper to taste.
