Ingredients
- 6 large eggs
- 3 slices bacon, cooked and crumbled
- 3 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 tsp white vinegar
- Salt and pepper, to taste
- Paprika, for garnish
- Fresh chives, finely chopped (optional, for garnish)
Instructions
- Cook the Eggs:
- Place eggs in a saucepan and cover with cold water.
- Bring to a boil, then turn off the heat and cover. Let sit for 10-12 minutes.
- Drain and transfer to an ice bath to cool. Peel the eggs once cool.
- Prepare the Filling:
- Slice the eggs in half lengthwise and gently remove the yolks. Place yolks in a bowl.
- Mash the yolks with a fork and mix in mayonnaise, mustard, vinegar, salt, and pepper until smooth.
- Add Bacon:
- Stir in most of the crumbled bacon, reserving a little for garnish.
- Fill the Egg Whites:
- Spoon or pipe the yolk mixture back into the egg whites.
- Garnish:
- Sprinkle with paprika, the reserved bacon crumbles, and chopped chives if desired.
- Serve:
- Chill in the refrigerator for at least 20 minutes before serving.
