Bacon Deviled Eggs

Ingredients

  • 6 large eggs
  • 3 slices bacon, cooked and crumbled
  • 3 tbsp mayonnaise
  • 1 tsp Dijon mustard
  • 1 tsp white vinegar
  • Salt and pepper, to taste
  • Paprika, for garnish
  • Fresh chives, finely chopped (optional, for garnish)

Instructions

  1. Cook the Eggs:
    • Place eggs in a saucepan and cover with cold water.
    • Bring to a boil, then turn off the heat and cover. Let sit for 10-12 minutes.
    • Drain and transfer to an ice bath to cool. Peel the eggs once cool.
  2. Prepare the Filling:
    • Slice the eggs in half lengthwise and gently remove the yolks. Place yolks in a bowl.
    • Mash the yolks with a fork and mix in mayonnaise, mustard, vinegar, salt, and pepper until smooth.
  3. Add Bacon:
    • Stir in most of the crumbled bacon, reserving a little for garnish.
  4. Fill the Egg Whites:
    • Spoon or pipe the yolk mixture back into the egg whites.
  5. Garnish:
    • Sprinkle with paprika, the reserved bacon crumbles, and chopped chives if desired.
  6. Serve:
    • Chill in the refrigerator for at least 20 minutes before serving.
