A rich, easy to prepare soup that makes a great appetizer.
1 1/2 teaspoons olive oil
2 yellow onions, thinly sliced
1/4 teaspoon dried thyme
2 cups water
2 cloves garlic, minced
2 1/2 teaspoons flour
1 cup beef broth
1/8 teaspoon ground nutmeg
4 thin slices French bread, toasted
2 tablespoons grated Swiss cheese
1 tablespoon grated Parmesan cheese
- In a large nonstick skillet, heat oil over medium heat. Add onions, thyme, and 1 tablespoon of water. Cover; cook for 5 minutes. Uncover; reduce heat to medium-low. Cook until onions are golden, stirring, about 15 minutes.
